Don't fret the VRM specs.  Those motherboards all supply much more power than you will ever use unless you're going to overclock with LN2 cooling.

Get the features you need.  For M.2, seems like at least 3 or more slots is pretty much the norm.  I'd suggest getting 4.0 slots.  The PCI 5 slot is for future cards, so get it if you plan to future proof.  As for USB, there's usually a couple type A and maybe a type C front panel connector.  There also can be a USB 2.0 front panel connectors.  This is all on the product list, as are the back panel connections.  If you need more, than a hub is an option.
