Photo storage on a new Mac

Photo storage on a new Mac

I just purchased a new MacBook Air (8/8, 512 GB RAM, 1 TB SSD) to use as a general laptop and photo processing platform.  I haven’t used Macs in a few years and have a really basic question - I just installed Pixelmator Pro and want to start working with the images I took over the weekend.

How are people doing photo storage?  I don’t want to include all my images in the native Photos app because I don’t want my iPhone and iPad getting force fed everything via iCloud.  I can see copying final processed images into Photo, but not everything.  In the past I backed up images from my Win laptop to a pair of external hard drives, I’ll be looking at new backup options with the Mac.

Is it as simple as creating folders on the Mac outside of Photos?
