"What the human eye sees" and "what the human mind sees" are vastly different things.

The human eye itself has an instantaneous dynamic range in the 10-14 stop range, similar to a modern ILC sensor. The brain can then take multiple readings by the eyes and combine them into one mental picture with far greater dynamic range, over 20 stops. That's what you're doing in your image, and what in-camera or post-processing HDR modes do.

As for camera settings: you can use the flattest picture profile (eterna) with lowest highlight and shadow contrast and enable DR400 to maximize jpeg dynamic range; for raws, you can use an in-camera HDR mode or bracket at different exposures and combine those afterwards in post processing.

Beware that in many cases, greater dynamic range does not equal a prettier image. At some point it starts looking very flat and/or fake.
