R5 and high speed sync

I routinely do off camera fill flash in sunny environs for portraits.   I have an rf 85 1.2,  and want to shoot wide open to take advantage of the shallow depth of field.  That typically means using a shutter speed well over the sync limit of 1/200 when outdoors.  Even though the flash rig (Canon 600 and Yongnuo transmitter) is set to high speed sync, I'm having problems.  With r5 set to full manual, aperture to 1.2, when I try to dial the shutter speed up to say 1/1000, it won't roll past 200.  It senses a flash product in the hot shoe and wants to top out at 1/200.   How do I override this.
