Olympus OM-D E-M5 Mark III - what I see is not what I get

Hello!

I just migrated from DSLR to a new Olympus OM-D mirrorless camera (E-M5 Mark III). I already turned off all live view boost functions to get the bonus of mirrorless "what you see is what you get" through the viewfinder & EVF. Unfortunatelly it still adjusts the viewing exposure/brightness whenever I recompose the shot which gives me no confidence about the result of my final exposure. I already scrolled down all the menus trying to figure out what I missed with no luck. What am I missing?
