The big difference is handling. I much prefer the R, to be honest - I'm one of the few that gets on with the touch bar, but even without that, I think that touch and drag AF is the best way of selecting focus point, and that's a fair bit easier and more comfortable on the R than the R6 for me. Also, rather to my surprise after using EOS cameras with a rear dial for 30 years, I find that the 4 way touch pad is actually a lot easier to navigate the menus with than the joystick and rear wheel. Also, although this bit is completely irrational, the lack of a top plate LCD irritates me on the R6. I don't miss it on the RP, so why on the R6? Don't know. A much more rational complaint is that the R6 mode dial is much harder to use with the camera to the eye than the RP one - the RP one has a slight overhang over the back of the camera, so is very simple to turn, whereas the R6 one is set back. Perhaps that's because it's thus harder to change accidentally, but it makes it much harder to change deliberately. Just as well I normally shoot in Fv these days.
I certainly don't regret the R6 in any way, but I do feel Canon made a few missteps with the handling of the camera compared to the two earlier R models - both of them are actually nicer to use.

I pretty much agree with this, except that I do prefer the dial to the top LCD. I can never actually see that darn LCD, and turning on the light for it is a pain.

I will add that the battery grip for the R is actually much better than the one for the r5/6. In fact, the R battery grip makes me feel like I'm holding a 1-series camera. It's quite nice.
