Hard to recommend alternatives because Android's plethora of OS versions, lens and sensor configurations and manufacturers' selective implementations / sabotage of Camera2 API make app compatibility hard to predict. I've owned Camera FV-5 since my first phone and it's always worked, but have never had a binned camera.  (You may want to try something like Camera2 Probe to see what your phone's capabilities are.)

I use Hedgecam2 in a manual mode and find Manual focus in the pop-up (three sliders icon) row of focus alternatives. I have found that tinkering with the GUI settings or moving from single shot to DRO, HDR, etc. modes tends to make items appear and disappear - you might reset the app to defaults and look again. Hedgecam2 is a collaborative spin of free open source Open Camera, so depending on compatibility and preference you might want to try that instead.

Apart from those and (luckily) a couple of good GCam (Pixel) mods that work for me, I like Snap Camera HDR . Note that while the Play Store lists free version 8.7.8 as the initial installation, the paid app has been upgraded significantly to 8.10.4. It has manual focus and pretty much all other enabled settings, and has the most configurable under the hood HDR settings and customizable multi-mode user interface I've found.

All the above work on my Moto phone, which is unusually finicky for compatibility with apps I used on past devices. You may get other good recommendations for yours.
