Unless you turn off the light option in the menus, chances are that it clicked on at some point if there were focusing issues. The D7000 isn't that smart in knowing when not to use the light when it comes to disturbing the subject or that things are at a distance.

Dogs are kind of strange in that they take interest in you if you take interest in them. If not, most dogs don't care but if they believe you are looking at them even with a camera (which I'm sure they don't know what it is) their behaviours change.

The most recent cameras I've had prior to D500 and D850 were D300 and D700.  If either of those had an AF-assist light I don't remember it being a factor.  In really dim conditions I relied on the AF-assist light in my SB-800.

Dogs will often take an interest in anything out of the ordinary.  They have a lot of curiosity.  But if they're being ignored they usually lose interest.  That's why, if a dog is coming near me on the rally course, and the dog is obviously looking at me, I'll look away and try to appear as boring as possible.
