Generally, in my limited experience - with a moving subject, you'd want to use AF-C.  On newer cameras, like the X-T4 you'd likely use AF-C and have eye/face tracking turned on.

If you were using AF-S, with either back button or shutter focus - the camera would focus on that point, but depending on the speed of your subject's motion, by the time you take the shot - they're now closer, and wouldn't necessarily be in focus any more.
