when I'm on soft-proofing or printing on Lightroom classic, it gives me the following color profile options:

Canon iP8700 series GL2, GL3

Canon iP8700 series MP2

Canon iP8700 series PT1, PT2, PT3

Canon iP8700 series SG2/LU2, SG3/LU3

Question:

Why don't I get an option for the best quality print? (GL1 or SP1?)

With some papers--typically matte papers--Canon does not provide a 'quality 1' profile because Canon and accordingly its driver take the position that the paper cannot be printed on at that high quality. Assuming MP above refers to Canon MP-101 Photo Paper Matte, then that's the reason.

However, there should be 'quality 1' profiles for Canon SG-201 Photo Paper Plus Semi-Gloss and Canon LU-101 Photo Paper Pro Luster, just as there are for Platinum.

As for glossy, there should be a 'quality 1' profile for the best Canon glossy (PP-301), but there may not be for lower-quality glossy photo papers like GP-701.
