The D500 is an interesting option indeed - it would also largely address the limited AF sensors coverage in the D750 (and full-frame DSLRs in general). Not sure I want to go backwards in terms of High ISO IQ though...

Low light performance is, as one would expect, driven by how much light its used to make the photo and we which generation sensor the camera is built around. One of the reasons the D500 is so well regarded as a sports body, is the fact that a 70-200mm f/2.8 zoom captures an angle of view equivalent to a 105-300mm zoom on a full-frame body. A 300mm f/2.8 prime captures a 450mm equivalent angle of view.

Filling the frame with sports action can be a challenge, even from a good field access position, unless one is using a 400mm or longer lens. However, filling the frame isn't the only challenge. Putting enough light on the sensor, is another. It's why God inspired us to make 400mm f/2.8 and 600mm f/4 primes

Of course, exotic glass isn't in everybody's budget range. Which is where the D500 and Canon 7D cameras enter the picture. The crop factor helps address the issue of filling the frame. A 300mm f/2.8 prime, being lower cost by a good margin than its longer siblings, addresses the light issue.

For example, a D500 with a 300mm f/2.8 will put at least a full-stop more light on the sensor than a full-frame body using a 100-400mm f/4.5-5.6 zoom while also capturing a more narrow angle of view. Depending on the megapixels of the full-frame camera, the APS-C body may capture the subject in higher resolution.

You don't mention which sports you shoot. If soccer or other field sports are on the list, an APS-C body with a fast zoom or prime may be a great fit for you.
