What am I doing wrong or missing - a6600 vs iPhone 12 Pro

OK - this may seem like an odd comparison, but I was really surprised this afternoon when I took my iPhone 12 Pro and a6600 + Tamron 17-70 outside for a couple of quick snaps.

The sky using the a6600 was blown out and did not look anything like the iPhone 12 Pro.  Yes, I left the camera on Auto on purpose to see what the pic would look like right from the camera as if you just picked it up and snapped a photo.

Is there a setting I am missing or is the iPhone just that much better at creating more evenly exposed photos without adjustment?  I understand that Apple does a lot of on device processing to capture a photo, but this was surprising to me in comparison.

If you had the a6600 in this type of situation (bright sky, lots of contrast), what settings would you typically use to capture a photo similar to what I saw from the iPhone 12 Pro?
