Pany GH5 Photo Style questions

As I had gotten rid of my Nikon D800 and am starting to use the gH5 for still photo as well as video, I've noticed that the still photos are a bit over sharpened after I applied my normal adjustments, which includes a final step of sharpening.

When I examined the un-adjusted image, it is sharp enough already. I think the camera has already processed some sharpening in camera. So my additional sharpening made the picture over-sharpened.

I am using "Natural" photo style and all the adjustments (contrast, noise reduction, sharpness, saturation, etc.) are set to 0.

I would prefer the original image un-sharpened. I guess I can do that by dialing down the sharpness (-) in photo style.

That leads me to the following questions:

1. Is there any explanation of the subtlety of difference of different photo styles?

2. If I lower the sharpness of the "Natural" photo style, I would have to create a custom setting, mimicking "Natural" before the change in sharpness, right? I don't normally process sharpening in my video edit.
