Influencing Automatic Exposure

Is it possible to influence the automatic exposure of Sony Alpha cameras?

By this, I mean somehow adjusting full automatic modes and A, S, and P modes.

The reason is that my Canon cameras, for example, expose very different in the automatic and semi-automatic modes. The Canons tend to choose larger apertures at lower ISO, while the Sonys always choose smaller apertures (rarely greater than 4) at higher ISO. And this is even though the Alphas usually have 1200 metering points, while the Canon R's only have 384. I find this odd since Canons could choose smaller apertures due to better (more) image stabilization (body + lens) - vice versa for the Sonys.

I know I can limit the ISO on the Sonys in the semi-auto modes, but even so, Sony always chooses apertures that are slightly too small for my taste.

Any experience or technical insight (other than using full manual mode, of course) on this?
