There are thousands of different skin tones in this world. It's up to you to get it right. Starting off with the correct white balance as mentioned above by Nawlins Contrarian is a good start. If really great/accurate skin tones are critical to your work, you need to start with a full spectrum well balanced light source.

If the subject of the photo will never see the photo or have any input, you can adjust the skin tone to look any way you or your client likes it.
