Why not? A locking remote release, bulb mode & a kitchen timer would seem to meet your needs. Release the lock when you hear "ding."

Back in the day, you'd just release the cable release thumbscrew when time ran out. My Olympus wired release was $10 & has a little plastic slide lock under the button.
