In 10 days I'm leaving for a 3-day trip. I will be shooting fields and long distance horizon; i.e. mainly landscape, but also food, people and anything interesting around. I don't like to change lenses often, but sometimes it's crucial.

I like the photos you have posted, but the ones with the Sigma 56mm are especially appealing to me were .

I will take on the trip 11-22mm f/4-5.6, the 32mm 1.4 and the 18-150mm f/3.5-6.3.

Now I need your advice. Do I need to buy any of the Sigma lenses for the M mount, for example the 56mm f/1.4 having in mind the range of the available lenses?

Well, definitely not the 30mm, since you already have the Canon 32mm. The Sigma 56mm would be a good choice if you plan to shoot portraits that are a little closer/more intimate than your 32mm. The 16mm would be good if you want something wide for low light situations, like nightscapes, indoor group photos, or even food. They're all excellent lenses, but whether they're worth it for you depends on what you want to shoot and how often.
