Define sharpness.

Soon, I'll be the owner of a new Z7ii (had the D750)

Congratulations.

Sharpness question: Z 24-200mm f/4-6.3 on a Z7ii vs Tamron SP 70-200mm F/2.8 Di VC USD G2 on a D750 ?

I'll take the Tamron at f/2.8-f/5.6 over the NIKKOR. Not only is there a distinct lowlight advantage, there is also going to be an AF advantage, and probably an image quality advantage over the NIKKOR being used wide open at those focal lengths.

If you are just shooting at f/8 between 70mm and 200mm and AF is not critical, then the NIKKOR is probably good enough.
