Why can't they make sensors with pixels that turn off before getting overexposed?

Sensors could have unlimited dynamic range if pixels stopped absorbing light at a user-set point. All you would have to do is take what would otherwise be the brightest exposure in a bracketed series and it would capture the whole dynamic range of the scene as midtones in one exposure. Why don't camera manufacturers do this? Perhaps it would require too much processing power?
