Depends on how much editing you want to do and what your overall workflow plans are.  Do you intend this to be your primary editing platform?  Or is it only for quick and casual use while traveling?  What are you working from, RAW or jpeg?  What type of volume of photos are you expecting to work with; dozens, hundreds, thousands?  Are you used to using another platform and OS for your editing currently?

I use my S7+ when I travel and find it just fine for that.  It could likely work as my primary platform if I put my mind towards that goal.  I will say this is about my 5th or 6th Samsung tablet I have carried for this purpose and overall the experience has improved with each device and OS generation.  And the apps have expanded their capabilities as well.  I have also used my iPad Pro 11" for the same purpose.  Both systems have pluses and minuses.  The iPad's biggest plus is probably the better Adobe app feature sets on iOS compared to Android.  Storage capacity and general file handling are probably the minuses.  Personal preference I prefer the S pen form and feel over the Apple pencil.  Android is a lot more flexible when it comes to storage space and file handling.  I have a 512GB microSD in my 256GB S7+, so plenty of storage.
