Color profiles just fix color levels and bring colors that are too far from target bit closer to it. Altho you can get creative with that too.

They have no impact on how well can camera see colors, thats what CFA does, which is physical layer and cannot be tweaked.

In case of S5 Pro, most color profiles, including even how much should primaries be boosted are kinda wrong. Also S5 Pro doesnt have some ground breaking color accuracy. Its actually sorta above average.

For really good color accuracy with camera, you need something that has excellent CFA as baseline and then having custom color profile (to align CFA with reality, or at least your vision of it) and to match it with lens you are using.

There were some Sony cameras that had excellent CFAs, but mostly werent that highly regarded, cause color profiles were just not so great. If I dont mind Sony cooking RAWs since basically when they started with dSLRs, which definitely didnt help either.

And for obvious reasons, lens have kinda big impact on colors too..

Colors aint easy or simple.
