To be honest, while x100f is a great photo camera, the video on older Fuji bodies is pretty bad, with lots of aliasing and moire. The 4k update on x-t2/xpro2 fixed it for these cameras, but no such update for the x100f im afraid.

If you have an iphone 12 Pro Max, it probably takes amazing video clips, with better dynamic range etc. I would just use that. The stabiliser in Ip12 Pro is good too, i don't know if you even need a gimbal for it.

On X100f you can get way shallower depth of field, but i don't know if it is worth it at such low quality. But the only way for you to see if quality is good enough for you, maybe it is, is to go and shoot it.
