I use this camera for very long walks in Europe (it was my x100f at the time and have not returned since what seems to be going on).

You cannot go wrong with the camera if you can live with a fixed lens

It is idea Imho for what you may be looking for

Or as an alternative an XF10: It has no VF, no leaf shutter, is worse in control and has no WR. But it has a wider lens and most important for hiking: It is very small and light but delivers in IQ.

I don't know if the X100V has in camera panorama-mode. The XF10 has it and it can be nice for landscape.
