I shoot mostly birds and some landscapes and my my main lens is a Sigma 150-600 contemporary. I did consider the d750 but I have a d610 and it definitely resolves less than a sensor with no AA filter.

The D500 has a second AF processor and a more advanced AF system similar to the D5 and D850.  It has much better focus performance for action than the D810.

I photograph equestrian foxhunting - riders on horses going over jumps.  For this type work my D800E had a 67% in focus rate, the D810 73%, and the D500 95%.  The D850 also was above 90%.

That's a big difference, and it's mainly in the AF speed.  I also find the Group AF mode in the D500 is nearly flawless while the D810 introduced that mode and it was sluggish in comparison.  Group AF mode uses nearest subject priority, and when unobstructed it almost never picks up the background.  On top of that the frame rate of the D500 is much faster - and you can write images without stopping for 200 frames.  Not that you need that, but you'll fill the buffer on a D810 and it takes time to clear.

The D7500 is a newer camera, but it only has one processor that handles both image processing and focusing.  Compared to the D500, it's much slower.

Look for a used D500 with moderate use - 75,000-100,000 clicks or less.  I have seen them recently for $850-950 US.  That's half the retail price.
