The definition of DOF is not based on the difference in sharpness at the plane of focus vs sharpness elsewhere. It's based on when the image sharpness falls below some predetermined absolute value.

If you are going to define a metric based on the difference between in-focus sharpness and some other level of sharpness, it's best to call it something else.
