How so?

Consider the following:

Blue is blur predicted by geometric optics. Red is actual measured blur.

In this case, and in many cases, moderately far away from the focus plane, the GF lenses of the GFX 100S actually have slightly more DOF (less blur) than geometric optics predicts. Near the focus plane, all lenses on the GFX 100S (and the a7RIV, and the Z7, etc) have more blur than geometric optics predicts.
