Seems like no control over the image in manual mode

Today, while shooting with FZ1000 Mark2 indoors, I wasn't satisfied with the colors in Auto mode and decided to go Manual. The hell burst out! I felt like I had no control over the camera at all.

I was adjusting my params and saw the preview in the viewfinder, until I was OK with what I see. Let's call it State A.

Then I half-pressed the shutter - the camera did its own calculation/calibration/adjustment/whatever and came up with what I will call State B, which was displayed in the viewfinder.

And then after I made the shot - it had yet another state when played back, state C.

Can anyone explain what was going on here? Is there a specific setting that causes the camera to interfere with what I have set up?

No lens filters, AFS focus mode.
