A full-frame body with a 70-200mm f/2.8 has been the professional choice for decades. I'm not saying that it's the only choice, but people choose it for a reason.

For a technical reason to use in a professional environment. A street photographer with a big black camera and a huge lens looks suspicious like a paparazzi. A small unobtrusive camera will increase chances to get a nice street portrait.
