I realize that even with high shutter speeds it's not possible to completely stop the wing motion but I think that a little wing motion is ok in a photo of a hummingbird or hummingbird moth as long as they are otherwise in sharp focus.

A flash might however since for close-up, some (auto) strobes can be 1/10,000 to 1/50,000s, (1/1000s @ full-power).

You are correct, often you do not want to stop all motion.  You need the dynamics.

There is a time/place for both types of images.
