In my research (I was considering exactly the same two lenses and which bodies to go with them) and it seems the R5 has caught Canon up with the A1 in terms of overall AF speed. So that's out of the way. So I have decided to go with the R5. I have talked with people who have the 200-600 and the A1 and they love the combo. But for me, size and weight are big considerations. And I'm not so sure about CFExpress Type B at this point. Type A prices are now dropping to reasonable prices. So That has helped me too. 
I was a Nikon Z owner, but everything is sold but one lens and I'm buying into Canon as I write this. (Nikon just doesn't seem to be going where I want to go. I thought they would make a lot better choice than they have since I bought my Z6, their new hagiography to the Nikon FM was the straw the broke the camel's back.)
I'm was hoping Canon would come out with.a lens like the Sony 200-600, but as people have mentioned, the size and weight difference pushed me towards the 100-500 instead.
