These firewire drives you speak of...
Are they "openable"?
By that, I mean can you open them up, take out the drive itself, and then put it into another enclosure, or perhaps into a USB3/SATA docking station?

How many drives do you have?
How many of those are "source" drives, and how many are backups?
You really only need to transfer from the source drives.
Then, create new backups with USBc drives.

I don't see where using Apple adapters for this would be "not safe".
You need two:
- Firewire 800 to tbolt2
- tbolt2 to tbolt3
And of course, the firewire800 cable to the drive (either firewire800 or firewire400).

I would use CarbonCopyCloner to do the actual copying and NOT USE the finder.
REASON WHY: If the finder encounters a corrupt file, it will abort the transfer.
If CCC encounters one (or more) bad files, it will make note of the file, and then keep going, and conclude the job. Then it will present you with a list of files that were not copied, and you can decide what to do next.
