I'm a long time Nikon user, including the Z7 II. I bought the R5 + RF 100-500 specifically for birds and BIF because that's just not the Z7 II's forte.  I have zero experience with Sony so can't offer a comparison but the RF 100-500's 7.1 aperture hasn't been an Achilles heel for me. And the R5's sensor is so good I'll push ISO up to 8000 and still get acceptable results after post processing. Recently I added the 1.4x extender because I wanted to shoot some osprey and eagles nesting and 500mm wasn't enough. I didn't want to crop. It kicks the aperture up to f10-14 but even that hasn't been an issue for me because I'm going in tight, and again the ISO performance is so good.

That said, I still have my Z7 II and having two systems really is a PITA. I'm not quite ready to go all-in Canon, and honestly, as you know most L lenses are not easy to come by now, so I couldn't build a complete system now if I wanted to. So I'd say, if you have a decent Sony lens collection you might want to go with the A1 if that's something you are considering. It looks like it's a tad easier to get than L RF lenses right now.
