There is a reason why the D700 is still a very well regarded and sought after camera. I regret selling mine, though it was necessary at the time.

I was going to say you can assign the AE/L-AF-L button on the D750 for back button focus but you seem to be across that. What you can't do is physically move the button!

I'm not too familiar with the layout and features of the D600/610, but maybe check those out.

Otherwise, find yourself another (good, lightly used) D700 and keep enjoying photography as you have been doing. No need to 'upgrade' if you are not gaining anything in process.
