In that case, I encourage you to think in terms of weight, and where you intend to go from a lens standpoint.

The 20-60 & 70-300 is a very good two-lens combo, although not particularly fast, and neither super long nor super wide. But, when coupled with the S5 you have a great, relatively light, FF kit that covers most situations.

The 24-105 & Sigma 100-400 DG DN is another very good two-lens combo. And becomes a great three-lens combo when combined with the Sigma 14-24, or Panasonic 16-35. And combining the 100-400 with the faster frame-rate of the S1, would make a better wildlife kit.

Of course, if your intent is to compliment the kit zoom with primes, then the above doesn't mean much.

As for viewfinders, I have both the S1R and S5, and I am rarely aware of the differences in EVFs. I just raise it to my eye and shoot.

I much prefer the sound of the S1R shutter as compared to the S5.

I like the way the S1R feels in my hand - particularly with larger lenses, but I am grateful for the lighter kit of the S5/20-60/70-300 when I have to carry it very far.
