Recently, I've tried an "HDR" moon where you capture not only the unlit part, but detail in the lit part.
It's actually fairly simple to start with, two images blended with a grad filter mask... although to tidy the end result up it benefits from a few more stages. Alyn Wallace did a good tutorial.
