I don't see how that should be possible. The menu leaves two options for adjustment in the B&W mode: Contrast and sharpening.

Mounting physical filters in front of then lens could be a solution, but I have never tried it with digital cameras and don't know if it works exactly like on film - but why shouldn't it.

Most PP programs have some kind of B&W module with such filters included. It's quite fun to play around with them not only to darken a blue sky to enhance clouds but also to tone down parts of the picture which is not the center of the content (provided the colors in the picture allows it). Of course if it is overdone, one can end up with quite surreal results.
