Sony A7R III comparison to Canon 5D Mark IV

I just did a three-day rental of a Sony A7R III to compare against my 5D Mark IV. I've done numerous tests (indoors and out) both using my 16-35 f/4 lens, and I have to say... the Sony is not noticeably crisper as the claims suggest.

I know it wins the megapixel race, but I'm not seeing a staggering gap in the sharpness between the two sensors. At least not what I was expecting to see. They're very close and it takes pixel peeping at 200 percent to see the Sony has a wee bit more crispness.

I'm not a video shooter so the 5D IV video issues are less of a concern, I was mostly concerned with comparing the image quality between the two.
