What more can Tamron give me that I couldn't do with Sony?

Better microcontrast, better bokeh, shallower DOF when wanted, better sharpness.

The 70-180 2.8 is in a higher category for rendering, but I often happily use the Tamron 70-300 for travelling and hiking. The Sony 70-300 is sold and not missed...

I also sold my Sony 70-300mm several years ago and do not miss it one bit.  It was marginally sharp for the 42mp I was shooting at the time, was one of the least-contrasty lenses I have shot on Sony bodies (yielding lackluster images), and the autofocus was relatively slow when shooting action.  The Tamron 70-180mm would be a major step-up... even if 180mm was cropped, IMHO.
