You could make two images as suggested. A more traditional way is to get it right in camera. Digital is like shooting slide film. Expose for the highlights (biggest risk is blowing them out). Develop (Photoshop) for the shadows. Classic example of this is bride in white, groom in black. I would guess that if you're just concerned about skin tone you should be OK with minor tweaking.

Why not try both methods and see which works best for you?
