Whip Pan as explained in this video https://m.youtube.com/watch?v=ZhYvs7rrGnw

would highlight rolling shutter of Gfx100.

Yet Whip Pan is used in action films, fast paced scenes, FX transitions.

So many thousands of films don't fast Whip Pan, hence rolling shutter on GFx becomes moot in these thousands of films.

Is the entirety of your insight here based on watching that video?

Could there be camera movements slower than a whip pan that might cause visible rolling shutter issues or do you believe the whip pan is the only potential trouble spot?

Doppler if you observe films from Idrissa Ouédraogo, Ken Loach Satyajit Rai : Masters of their craft their generally slow moving films : filming similarly on GFx or A7x Rx Sx XTx Zx rolling shutter becomes moot.
