R5 One Shot AF seems to ignore selected focus spot

I’m orienting myself to my new R5 coming from a 5Dmk3, reading manual and watching YouTube videos and I’m not sure what I’m doing wrong.

What I want to do is select my focus point for a landscape shot.  I’m in AV mode, single shot AF using BB focusing with AF disabled for the shutter release.  I’ve selected the single point focus method (and even disabled all the other focus types except face tracking.)

I am using the joystick to select the subject I want to focus on.  When I push the AF-On button to focus, the camera selects something else, often whatever is closest to the camera and focuses on it, even though it is nowhere near my selected location.  All of the green squares in focus light up.

Before I do a factory default reset and blow away my wildlife C1 settings, what am I missing?
