EF 150-600mm vs RF 600mm vs EF 2x III

Currently, I am shooting portraits semi-professionally (part time photographer, part time attorney) - and am interested in picking up a longer lens for unpaid fun. I have a trip planned to Asheville and am hoping to get some semi-decent bear pics (without getting too close). It would also be nice to have a longer lens for zoo pics and maybe the occasional yard bird.

I am considering picking up a used ef 2x iii to shoot with my 70-200mm 2.8 mk ii - but I am thinking that will just barely be long enough (or might not be long enough at all). It appears the adapter is running right around $400 USD used.

The RF 600mm is tempting because it is fairly compacts and I understand it to have fast AF - despite its slow fixed aperture. It doesn't appear these have really hit the used market yet, and new they appear to be $700 USD.

Lastly I'm considering Sigma/Tamron's 150-600mm ef lens - these lenses might be better in semi lit woods with their faster aperture - but I'm not sure the IQ is really worth the premium over the 2x adapter since the cheapest I've been able to find these lenses is about $800 USD.

Per usual, I am probably just over thinking things - but I want to spend the least amount that makes sense image quality-wise considering I will likely not be deriving any income from this lens/adapter.
