I’m also thinking of getting the 27mm f2.8. pancake lenses with it because i’ve read a lot of good things about it and it is compact as well.
(BTW the camera and the lens are most likely going to be bought second hand)
I honestly just need some help from fuji camera users because I don’t have many photography friends.

For a beginner any of them will be great. The X-E3 of course for example has a higher resolution and better AF, though. Something to keep in mind.
When it comes to image quality it's the lens(es) that matter the most. The 27/2.8 is a good lens, but there are of course better lenses. Else a good beginner lens is the 18-55/2.8-4. It has good image quality and because it's a normal zoom it can better help you discover at what focal length(s) you shoot the most. It also has OIS, which can be good to have.
However the most important thing of all for taking/making great photos is of course to learn how to use the gear.
