This won’t make much difference to the colour, unless it stops some channels from clipping.

Whenever we are not following the camera's suggestion (where the color science of a brand kicks in), we shall never have to consider the sort of issue. Not to mention the sharpness, the saturation, the tone etc SOOC jpg settings could be customized in-camera. There must be setting for you to create your own profile.

In- camera settings can’t match shooting in Raw and using decent processing software in post.

I had once dug deep into RAW conversion and post processing. Once I thought 50% of joy was from post processing, and 90% of a success (to myself) output should be by post processing. Not anymore in recent years. Thanks to improved hardware, and paying more attention for the best setting, I could reduce PP a lot. RAW would be reserved for very difficult lighting shots...

Tried it, reduce reliance on PP as much as possible, we might find SOOC indeed is very usable.
