Less camera shake when using unstabilised lenses gives better looking pictures. Bear in mind that there is much more light in Florida and Texas than in Scandinavia and Northern Britain.

True. There are those times when the light is low, and the subject is in motion, and I want to use a high shutter speed with a smaller aperture, like f8. In such cases I just HAVE to raise the ISO setting, but in such unusual cases I normally just shoot with my Nikon D810 anyway. That is when the Nikon D810 becomes really useful. Most of the time though, I can just use my Sigma cameras and lenses, and I'm quite happy to shoot at ISO 100 or 200 with them. I guess it's like owning a pick-up truck or a van as a second vehicle. The daily driver, which is more fun to drive, uses less gas, and is more comfortable is the one that gets used most of the time, but if you're taking a bunch of people or need to move a bunch of stuff, then that second vehicle comes in really handy.
