Light for Product Photography

During this pandemic, my teenage son has taken an interest in woodworking, creating coasters, cutting boards and charcuterie boards. I’ve been helping him with some of the marketing, including product photography.

Focus stacking using my Fuji X-T3 has proven to be very useful, but I’m struggling with light. I recently outfitted my garage with amazingly bright LED strips [5200 lumen, 6K] which is great for wood working, but not so great for photography. When focus stacking under that light, I observe bands of shadows as shown here:

Same method used for this one, in my kitchen which does not have LED lighting:

In looking at the light boxes available on Amazon, nearly all of them include LED rings or strips.  Can I assume that I’ll have the same banding problems?  Is there a whitebalance or other X-T3 setting that would avoid the banding under LED lighting?
