I guess what I'm asking is what do you do from taking the photo to editing them?

I am also using a Mac, though with a Sony camera, and likewise am transitioning to shooting only RAW. My workflow includes:

* Copy all RAW from SD card to computer.

* Use Mac Preview app to do first-cut triage. Trying to be more ruthless about deleting the mediocre shots and focus on better ones (they are still on the SD card in case I regret).

* Use Exiftool to generate XMP metadata files from the RAW, then to rename all files from sequential names like DSC01234.ARW to date/time based names like 20210124_140125z.arw.

* Use Adobe Bridge (free) as photo catalog/management app, to add additonal metadata, and to further triage files as keepers or rejects. Absolutely DO NOT use Apple Photo.

* Use Adobe Camera Raw and Photoshop Elements to develop selected RAW to JPEG.
