You cannot use a phone camera to experiment with aperture settings.

A larger camera is necessary to achieve a reasonable range of aperture values.  There simply isn't room inside a phone to provide any significant variations in aperture (that is a gross simplification of the technological problems involved, but it is still essentially true).
