The 16-80 would be a good start...Viltrox 56mm F1.4 for portraits & XC 50-230mm for telephoto...very affordable and great quality. There's a cheap XC35mm f2 as well with same IQ as the XF version.

Am I right in thinking the XC lenses are older and don't have AF?

Yes, and No.  All XC lenses are AF and great inexpensive options.
