My assessment is based on my own measurements. I own/ed most of the ef extenders and now also the RF ones and use/ed them on several big whites. While I agree with you that better sampling is in principle always better one can approach a field of diminishing returns. and with the R5 and the RF2x one is much closer to this regime than with the R6 for a given high quality lens. In perfect condituions - as you said its always good to increase the pixel scale (in my profession we often use 10-20x oversampling for high res work to be able to fully model the PSF ). But here we at the same time decrease field and in my wildlife applications I prefer to have this extra border to crop afterwards over a minimal extra detail that is not guaranteed because of other factors ...  And then it is also a question of money. These extenders are not cheap. So if you have to buy one it should be the RF1.4x in the R5 case but the 2x in the case of the R6 propably if the gap is not an issue...
